Place the washed lemon in the freezer.
Once frozen, get your grater, & shred the whole lemon (no need to peel it) and sprinkle it on your foods!

I do grate each organic lemon and put the grated in the freezer , but never thought of putting the entire lemon in the freezer. What a great idea, thank you for inspiration.
